Banana and Chocolate Cake
This is a fairly low-fat cake made with oil rather than margarine and is a great way to use going-off bananas that would otherwise be thrown away.
If you came to the ecocell A to B conference in January 2013 you might have had some.
All ingredients should, of course, be organic and local whenever possible!
Mix:
50g oats
150g flour – i usually do a mixture of wholewheat and plain and sometimes some of the non-gluten flour
125g sugar – usually half brown
1 tsp cinnamon
1/2 tsp baking powder
1/2 tsp bicarb
Add:
75ml oil – i used fairly local rapeseed but any will work
1 egg
3 going-off bananas – get them free or really cheap from shops – almost “skipping!”
50g chopped-up chocolate – fairtrade of course
Bake:
180 degrees, 40 mins
The original recipe asked you to slice the 3rd banana and arrange the slices prettily on the top before baking but i’m just too lazy for that sort of thing.
